Feed the Shady Scarecrow a Common seed and the Scarecrow pet is a 0.3% roll. Feed it a Prismatic seed and it's 5.53%. With a 10-minute cooldown between feeds, that's the difference between about 55 hours of feeding and about 3.
Fall Market Part 3 went live on October 3. The wiki still lists October 10 as the end of the Fall Market Event, so you get roughly a week of feeds.
What you put in the Scarecrow's mouth matters more than how often you feed it.

Feed Mythical and Divine seeds. The odds roughly double with each step from Score 3 to Score 5. Past Score 7, every extra point buys less and costs you a far more expensive seed.
How Seed Score works
The Shady Scarecrow is the new NPC that came with Part 3. Hand it any seed, it eats the seed, and you get one reward roll. Then you wait 10 minutes before you can feed it again.
Win or lose the roll, the seed is gone.
Your Seed Score starts with the seed's rarity, and the variant adds a bonus on top:

So a Gold Mythical seed scores 6, the same as a plain Divine. A Rainbow Prismatic scores 9. The maximum is 10, which needs a Transcendent seed with a Rainbow, Diamond or Ember variant.
One gap: Silver adds +0.5, but the wiki's odds table only has whole scores. Nobody has published what a Silver Rare (3.5) actually rolls.

Base chances at Score 1 are Rosy Root Seed 35.5%, Autumn Egg 29.5%, Autumn Seed Pack 20%, Carved Swingseat 9%, 3x Autumn Seed Pack 4%, 4x Autumn Egg 1.6%, Scarecrow 0.3% and Maple Melt Seed 0.1%. A higher score shifts weight from the top of that list to the bottom:

In the Scarecrow column, Score 3 to 4 doubles it. 4 to 5 nearly doubles it again.
Then it flattens: 7 to 8 is only about 1.3x, and 9 to 10 is about 1.1x. Add up the three prizes people actually want (Scarecrow, Maple Melt, 4x Autumn Egg). That's 2% of rolls at Score 1, 17.2% at Score 7 and 28.9% at Score 10.
How long a Scarecrow actually takes
The cooldown caps you at 6 feeds an hour. Average feeds per Scarecrow pet, if you feed the moment the cooldown ends:

Those are averages. You could hit it on feed two, or go double the average and still get nothing.
Maple Melt is the harsher one. At Score 1 it's 0.1%, about 1,000 feeds on average. A week of perfect, round-the-clock feeding is about 1,000 feeds. Don't feed Carrots and expect a Maple Melt before the event ends.
Which seeds to feed (and which to keep)
An Autumn Seed Pack (10,000,000 Sheckles or 199 Robux) is the easiest fuel. What's inside, and what each seed scores:

A pack seed averages a score of about 3.1.
Plant the Chestnuts. Feed the Russet Roots and anything Mythical.
The Scarecrow's own most common reward is bad fuel. Rosy Root is Uncommon, so feeding one back only gets you Score 2. It's 35% of your Score 1 rolls, which means the Scarecrow mostly pays you in seeds it doesn't want.
The Seed Pack rewards are better. One Autumn Seed Pack is 20% at low scores, and three packs climbs from 4% to 10.4%. Those packs restock your feeding seeds for free.
Don't burn your Transcendents
Transcendent seeds score 8, and a Rainbow one scores 10. They also cost a fortune. Maple Resin is 1,500,000,000 Sheckles from the Fall Merchant, and Scarlet Aspen is 2,500,000,000,000 Sheckles with a 0.14% restock chance.
Going from a Prismatic (7) to a plain Transcendent (8) moves the Scarecrow from 5.53% to 7.15%. That's under two extra percentage points for a seed that would otherwise grow for the rest of the season.
Plant it.
The exception is a Transcendent you already own and weren't going to plant. Then feed it. A 7% roll beats letting it sit.
Is the Scarecrow pet worth it?
The Scarecrow is a Divine pet with 100,000 hunger. Its passive, Farewell Crows, occasionally makes a Crow pet fly away for good to age up a random pet by 1.
So it deletes a pet to give another pet one level. As a leveling tool it's slow, and the wiki doesn't yet say which pets count as a "Crow." The original Crow from last Halloween is no longer obtainable, and the new Scarf Crow arrived the same day, so that's the obvious candidate.
The real reason to chase it is the Fall Collection. The Scarecrow, Rosy Root and Maple Melt are all on the Fall index list, and hitting 80% of that collection unlocks the Fall Shovel skin.
Maple Melt is the better prize anyway. It's a Prismatic multi-harvest crop, and the only Prismatic from Part 3 you can actually get right now. If you're picking a target, it's this, and from Score 4 up it rolls at almost the same rate as the pet.
The 4x Autumn Egg roll is the sleeper. Each Autumn Egg has a 0.5% Enfield chance, so four eggs at once is four more shots at the Part 2 headline pet. Our Part 2 guide has the full Autumn Egg table.
Scarf Crow and the Harvest Moon Merchant
The Scarf Crow is a new Uncommon pet in the Fall Pet Shop: 100,000,000 Sheckles or 299 Robux, with a 50% chance to be in stock. Its passive, Fall Pickings, occasionally eats a fully grown single-harvest plant to apply the Fall mutation or give a pet a small XP boost.
Part 3 also added the Harvest Moon Merchant, a traveling merchant with a 25% chance to appear near the Seed Shop. It sells leftovers from the Harvest Moon event:

On the wiki but not in the game yet
None of these can be earned from Part 3. The wiki marks them all unobtainable:
- Sapberry: a Prismatic multi-harvest crop. It was first tied to Part 3, but the wiki now lists it as unreleased, with no way to get it.
- Golden Raccoon: a Prismatic pet with 45,000 hunger. Its passive steals (duplicates) fruit from another player's plot, turns it Gold and hands it to you. Unreleased.
- Dracuvine and Pharaoh's Eye: unreleased crops with no tier listed.
No new codes came with Part 3. Check the Grow a Garden codes page for the ones still working.

What does the Shady Scarecrow do in Grow a Garden?
It eats any seed you give it and pays out one reward roll. Rarer seeds give a higher Seed Score, which raises the odds of the Scarecrow pet, the Maple Melt seed and 4x Autumn Eggs. There's a 10-minute cooldown between feeds.
